Classic Boston Cream Pie

Despite its name, Boston Cream Pie isn’t actually a pie. It’s a beautiful layered cake consisting of tender vanilla sponge, rich pastry cream and a glossy chocolate topping.

The combination works because each layer brings something different. The cake provides a light foundation, the vanilla custard adds cool creaminess, and the dark chocolate ganache introduces a rich finish without overwhelming the vanilla.

The finished cake looks impressive when sliced, revealing a thick golden custard layer between two soft layers of cake.

Ingredients

For the Vanilla Cake

  • 1½ cups (190 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 g) unsalted butter, softened
  • 3 large eggs
  • ½ cup (120 ml) whole milk
  • 2 tsp vanilla extract

For the Vanilla Custard

  • 2 cups (480 ml) whole milk
  • 4 large egg yolks
  • ½ cup (100 g) granulated sugar
  • ¼ cup (30 g) cornstarch
  • 2 tbsp (28 g) unsalted butter
  • 2 tsp vanilla extract
  • Pinch of salt

For the Chocolate Ganache

  • 1 cup (170 g) semisweet chocolate, finely chopped
  • ½ cup (120 ml) heavy cream
  • 1 tbsp (14 g) unsalted butter

Instructions

1. Prepare the Cake Pans

Preheat the oven to 175°C (350°F).

Grease two 8-inch (20 cm) round cake pans and line the bottoms with parchment paper.

Lightly grease the parchment as well.

2. Combine the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder and salt.

Set aside.

3. Cream the Butter and Sugar

Place the softened butter and granulated sugar in a large mixing bowl.

Beat for approximately 3–4 minutes, until pale and fluffy.

Proper creaming incorporates air into the batter and helps produce a lighter cake.

4. Add the Eggs

Add the eggs one at a time.

Beat well after each addition before adding the next egg.

Mix in the vanilla extract.

5. Add Flour and Milk

Add approximately one-third of the flour mixture to the butter mixture.

Mix gently.

Add half of the milk, followed by another third of the flour.

Add the remaining milk and finish with the remaining flour.

Mix only until everything is combined. Avoid overmixing.

6. Bake the Cakes

Divide the batter evenly between the prepared pans.

Smooth the surfaces.

Bake for approximately 25–30 minutes, or until the cakes are lightly golden and a toothpick inserted into the center comes out clean.

7. Cool Completely

Let the cakes cool in their pans for approximately 10 minutes.

Turn them onto wire racks, remove the parchment and allow them to cool completely before assembling.

Never add custard to warm cake because the heat can soften the filling.


Prepare the Vanilla Custard

8. Heat the Milk

Pour the milk into a medium saucepan.

Heat over medium heat until steaming and just beginning to simmer around the edges.

Don’t let it boil aggressively.

9. Whisk the Egg Yolks

Meanwhile, place the egg yolks, sugar, cornstarch and salt in a mixing bowl.

Whisk until smooth and slightly lighter in color.

10. Temper the Eggs

Slowly pour approximately one cup of the hot milk into the egg mixture while whisking constantly.

This gradually raises the temperature of the yolks and prevents them from scrambling.

11. Cook the Custard

Pour the egg mixture back into the saucepan with the remaining milk.

Cook over medium-low heat while whisking constantly.

The mixture will gradually become noticeably thicker.

Once it begins bubbling gently, continue cooking for approximately 1 minute while whisking.

12. Add Butter and Vanilla

Remove the saucepan from the heat.

Stir in the butter and vanilla until completely incorporated.

13. Chill the Custard

Transfer the pastry cream to a clean bowl.

Place plastic wrap directly against the surface of the custard. This prevents a skin from forming.

Refrigerate until completely cold, approximately 1–2 hours.


Assemble the Boston Cream Pie

14. Add the First Cake Layer

Place one completely cooled cake layer on a serving plate or cake stand.

If necessary, carefully trim the top to create a relatively flat surface.

15. Add the Custard

Stir the chilled custard briefly until smooth.

Spread a generous layer across the cake, leaving a small border around the edge.

The custard will spread slightly when the second layer is added.

16. Add the Second Cake Layer

Carefully place the second cake layer on top.

Press very gently—just enough to secure it.

Refrigerate the assembled cake while preparing the chocolate ganache.


Prepare the Chocolate Ganache

17. Chop the Chocolate

Place the finely chopped semisweet chocolate in a heatproof bowl.

18. Heat the Cream

Heat the heavy cream in a small saucepan until steaming.

Remove it from the heat just before it begins boiling.

Tips for the Best Boston Cream Pie

Make sure the cake layers are completely cool before adding the custard.

Keep the pastry cream covered directly on its surface while chilling to prevent a skin from developing.

Temper the egg yolks slowly when preparing the custard.

For the ganache, finely chop the chocolate before adding the hot cream. This helps it melt smoothly.
