Fudgy Chocolate Brownies

A great brownie should sit somewhere between cake and chocolate fudge.

These brownies use both melted chocolate and cocoa powder for deeper chocolate flavor, while brown sugar contributes moisture and chewiness.

Ingredients

  • 170 g (6 oz) dark or semisweet chocolate
  • ¾ cup (170 g) unsalted butter
  • ¾ cup (150 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ¾ cup (95 g) all-purpose flour
  • ¼ cup (25 g) unsweetened cocoa powder
  • ½ tsp salt
  • ½ cup chocolate chips, optional

Instructions

Prepare the pan

Preheat the oven to 175°C (350°F).

Line a 20 cm (8-inch) square baking pan with parchment paper, leaving some overhang for easy removal.

Melt the chocolate

Combine the butter and chopped chocolate.

Melt gently until smooth.

Set aside for a few minutes to cool slightly.

Whisk the eggs and sugar

Combine granulated sugar, brown sugar and eggs in a large bowl.

Whisk vigorously for approximately 2–3 minutes.

Add vanilla.

Add the chocolate

Slowly pour the melted chocolate and butter mixture into the eggs while whisking.

Mix until smooth and glossy.

Add the dry ingredients

Sift in the flour, cocoa powder and salt.

Fold gently with a spatula just until combined.

Do not overmix.

Fold in chocolate chips if desired.

Bake

Spread the batter evenly into the prepared pan.

Bake for approximately 25–30 minutes.

A toothpick inserted into the center should emerge with moist crumbs, rather than completely clean.

Cool

Allow the brownies to cool completely in the pan before cutting.

For particularly clean squares, chill the brownies briefly before slicing with a sharp knife.

How to Keep Brownies Fudgy

Don’t overbake them. Brownies continue cooking from residual heat after leaving the oven.

Measure the flour carefully because excessive flour creates a cakier texture.

Allow them to cool before cutting. Warm brownies can seem underdone even when they’re properly baked.
