Ingredients

For the Graham Cracker Crust

  • 1½ cups (150 g) graham cracker crumbs
  • 6 tbsp (85 g) unsalted butter, melted
  • 2 tbsp granulated sugar
  • Pinch of salt

For the Key Lime Filling

  • 1 can (14 oz / 395 g) sweetened condensed milk
  • 4 large egg yolks
  • ½ cup (120 ml) Key lime juice or fresh lime juice
  • 1 tbsp finely grated lime zest
  • Pinch of salt

For the Whipped Cream

  • 1 cup (240 ml) cold heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

  • Fresh lime slices
  • Additional lime zest
  • Graham cracker crumbs

Instructions

1. Prepare the Oven

Preheat the oven to 175°C (350°F).

Lightly grease a 9-inch (23 cm) pie dish.

2. Make the Graham Cracker Crust

Place the graham cracker crumbs in a mixing bowl.

Add the granulated sugar and salt, then pour in the melted butter.

Stir until all the crumbs are evenly moistened. The mixture should resemble damp sand and hold together when pressed.

3. Form the Crust

Transfer the mixture to the pie dish.

Press the crumbs firmly across the bottom and up the sides. The bottom of a measuring cup works well for creating an even, compact crust.

4. Bake the Crust

Bake for 8–10 minutes, until lightly golden and fragrant.

Remove from the oven and let it cool slightly while preparing the filling.

Keep the oven at 175°C (350°F).

5. Prepare the Lime Filling

Place the egg yolks in a large bowl.

Whisk for about 1–2 minutes, until slightly thickened.

Add the sweetened condensed milk and whisk until completely smooth.

Pour in the lime juice gradually while whisking.

Add the lime zest and a small pinch of salt.

Continue whisking until the filling is smooth and slightly thickened.

6. Fill the Pie

Pour the lime mixture into the warm graham cracker crust.

Spread it evenly with a spatula if necessary.

7. Bake

Return the pie to the oven.

Bake for approximately 12–15 minutes.

The filling should look set around the edges while the center still has a slight wobble when the dish is gently moved.

Avoid overbaking because the filling will continue setting as it cools.

8. Cool

Remove the pie from the oven and allow it to cool completely at room temperature.

Once cooled, cover and refrigerate for at least 4 hours.

For an especially firm and refreshing pie, chill it overnight.

9. Prepare the Whipped Cream

Shortly before serving, pour the cold heavy whipping cream into a mixing bowl.

Add the powdered sugar and vanilla.

Whip until medium-to-stiff peaks form.

Avoid overwhipping.

Spread or pipe the whipped cream over the chilled pie.

Decorate with fresh lime slices and finely grated lime zest.

Slice and serve cold.

Key Limes vs. Regular Limes

Key limes are smaller than the Persian limes commonly sold in supermarkets. They have a distinctive aromatic, tart flavor traditionally associated with Key Lime Pie.

If fresh Key limes aren’t available, regular fresh lime juice can still produce an excellent pie.

Freshly squeezed juice generally provides a brighter flavor than standard bottled lime juice.
