As the pie bakes, the pecans rise toward the surface and become deeply toasted while the filling underneath develops its characteristic rich consistency.

It’s especially delicious after it has had enough time to cool completely, allowing the filling to set into clean, beautiful slices.

Ingredients

  • 1 unbaked 9-inch (23 cm) pie crust
  • 1½ cups (165 g) pecan halves or roughly chopped pecans
  • 1 cup (200 g) packed brown sugar
  • 1 cup (240 ml) light corn syrup
  • ½ cup (115 g) unsalted butter, melted and slightly cooled
  • 3 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ tsp ground cinnamon

Instructions

1. Prepare the Oven

Preheat the oven to 175°C (350°F).

Position a rack in the lower-middle section of the oven.

2. Prepare the Pie Crust

Fit the unbaked pastry into a 9-inch pie dish.

Trim and crimp the edges.

Place the prepared crust in the refrigerator while you make the filling. Keeping the pastry cold helps it maintain its shape during baking.

3. Toast the Pecans

Spread the pecans on a baking sheet.

Toast them for approximately 5–7 minutes, watching carefully so they don’t burn.

Remove them from the oven and allow them to cool slightly.

This optional step intensifies their nutty flavor.

4. Prepare the Filling

Place the eggs in a large mixing bowl and whisk until combined.

Add the brown sugar, corn syrup, melted butter, vanilla, salt and cinnamon.

Whisk until the mixture is smooth and evenly blended.

5. Add the Pecans

Arrange the pecans across the bottom of the chilled pie crust.

You can reserve some attractive pecan halves to arrange decoratively across the top.

6. Fill the Pie

Slowly pour the filling over the pecans.

The nuts will naturally move and float toward the surface.

Arrange the reserved pecans on top if desired.

7. Bake

Place the pie on a baking sheet to catch any accidental spills.

Bake for approximately 50–60 minutes.

The edges should be set, while the center should still have a slight wobble when gently moved.

If the pastry edges begin browning too quickly, loosely cover them with strips of aluminum foil or a pie shield.

8. Cool Completely

Remove the pie from the oven and place it on a wire rack.

Allow it to cool for at least 2–3 hours before slicing.

Don’t rush this step. The filling continues setting as the pie cools.

How to Tell When Pecan Pie Is Done

The center shouldn’t look completely liquid when the pie leaves the oven.

Gently shake the dish. The outer portion should be firm, while the center should move slightly like set gelatin.

If the entire filling moves like liquid, it needs additional baking time.

Avoid baking until the center becomes completely rigid because the residual heat will continue cooking the filling.
