- ½ cup (115 g) unsalted butter, melted
Chocolate Filling
- 1 cup (170 g) semisweet chocolate chips
- 8 oz (225 g) cream cheese, softened
- ½ cup (100 g) granulated sugar
- ⅓ cup (30 g) unsweetened cocoa powder
- 3 large eggs
- ½ cup (120 ml) heavy cream
- 1 tsp vanilla extract
- Pinch of salt

- 1 cup (240 ml) cold heavy whipping cream
- ¼ cup (30 g) powdered sugar
- 1 tsp vanilla extract

Instructions
1. Prepare the Oven
Preheat the oven to 175°C (350°F).
Lightly grease a 9-inch (23 cm) pie dish or springform pan.
2. Make the Chocolate Crust
Place the chocolate cookie crumbs in a bowl.
Pour in the melted butter and stir until the crumbs are evenly coated.
The mixture should resemble wet sand.
3. Form the Crust
Transfer the mixture to the prepared pan.
Press it firmly across the bottom and slightly up the sides.
Use the bottom of a measuring cup to compact the crumbs evenly.
4. Bake the Crust
Bake for approximately 8–10 minutes.
Remove from the oven and allow it to cool while preparing the chocolate filling.
5. Melt the Chocolate
Place the chocolate chips in a heatproof bowl.
Warm ½ cup heavy cream until steaming but not boiling.
Pour it over the chocolate and leave undisturbed for about 2 minutes.
Stir until completely smooth.
Allow the chocolate mixture to cool slightly.
6. Prepare the Cream Cheese
Place the softened cream cheese and granulated sugar in a mixing bowl.
Beat until smooth and creamy.
Add the cocoa powder, vanilla and salt.
Mix until combined.
7. Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition.
Avoid excessive beating once the eggs have been incorporated.
8. Add the Chocolate
Slowly pour the melted chocolate mixture into the cream cheese filling.
Mix gently until the filling is smooth, dark and evenly combined.
9. Fill the Crust
Pour the chocolate filling into the prepared cookie crust.
Smooth the surface with a spatula.
10. Bake
Bake for approximately 30–35 minutes.
The outer portion should look set while the center retains a slight wobble.
Avoid baking until completely firm because the filling will continue setting as it cools.
11. Cool and Chill
Remove the pie from the oven.
Allow it to cool completely at room temperature.
Cover and refrigerate for at least 4 hours, preferably overnight for the cleanest slices.
12. Make the Whipped Cream
Pour the cold heavy whipping cream into a mixing bowl.
Add powdered sugar and vanilla.
Whip until medium-to-stiff peaks form.
